A place for sauces
Girona's cuisine is rich and varied. Dishes as original as goose with pears or the many sea and mountain specialities (that combine fish and meat) are the result of the plentiful, local produce, the abundance of fresh fish, seafood and good meat, the great wild mushrooms that can be picked throughout the year, the fruits that compose many sauces and, in short, of the combination of all these great ingredients.
Girona and particularly the region of L´Empordá, is famous for its cuisine. The local organic farms yield tomatoes, aubergines, onions, courgettes and peppers of excellent quality that constitute the essential elements of many dishes.
Fish and meats
As in the rest of the Autonomous Community of Catalonia, fish is a major part of the local diet. Anglerfish, hake, gilt-head seabream, sea-bass and suquet (traditional Catalan fish stew) are some of the region's most traditional dishes. Sometimes, seafood and fish mix with inland ingredients like snails. The result is a creative yet traditional fare, with dishes like lobster with snails and cod with thrushes. The list of imaginative dishes from this region goes on with delicacies like rabbit with snails, goose soup with honey mushroom, duck with white beans, rabbit with turnips, partridge with snails and pig's feet with aromatic herbs.The wide variety of rice dishes, recipes like fishermen's casserole, grilled grouper, escudella, Catalan-style broad beans, goose foie gras, the many different sauces, the variety of mushrooms that can be gathered from its mountains and so much more make this cuisine an incomparable treat that will satisfy the most demanding gourmets. Excellent sausages like Catalan sausages (made with rice, egg, etc.), bull (bulky Spanish sausage) and paltruc; cheeses like Garrotxa, Selva and Tupí; breads like corona and costrons and salted fish like the incredible anchovies from L'Escala are examples of the exceptional gastronomy of this region. Traditional desserts, made with lots of almonds, crème Catalan, cocas (buns) and excellent fruits (specially apple) are the best end for a delicious meal, especially if you have them with a little cup of ratafía (walnut ) traditional of this province.
Wines y restaurants
In the province of Girona the best wines have Designation of Origin Empordá - Costa Brava, with excellent rosé wines and young wines. However, many connoisseurs think that the future of the D.O. is aged red wines, some of which are already very good. El Bulli Restaurant, in Roses, is the ideal place for having some of the best regional cuisine. It was rated 3 suns by the CAMPSA guide. El Céller de Can Roca Restaurant in the city of Girona, Els Tinars Restaurant in Llangostera and Torre del Remei Restaurant in Bolvir are a some other excellent options to dine in this province |
